A Story That Lives in the Winery

At this stage, the estate covers 36 hectares, with a traditional agricultural footprint focused on grains and pig farming. The vineyard occupies a valuable 2 hectares, dedicated to the production of bulk white and red wine for daily consumption and to be served in the shop.
3. Towards viticulture
A passion for wine, a changing market, and the closure of the shop marked a profound turning point. The company decided to radically renew itself: it abandoned livestock farming to focus entirely on viticulture. A new 10-hectare vineyard was built, combining international and native grape varieties for a modern, high-quality production.
5. Zazzera wines today...
Today, the winery is an established Umbrian winery. Although the company has grown in production and quality, it has maintained its family-run character, the same atmosphere that started it all 50 years earlier. The wines produced are the result of careful selection of the grape varieties used and the stylistic signature of Fabiano Zazzera, who is committed to "modernizing production processes without distorting the identity of Umbrian wines."

With the vineyards in full production, the project becomes a reality. The old stables give way to a modern, technologically advanced winery. A facility designed to respect the grapes and the wine, where technology meets passion to create a "nectar of Bacchus" that reflects a masterful vision.

It all began in the mid-1960s in their grandparents' country shop. The need to supply their customers with wine drove the family to purchase the current winery in 1970. It was here that a fifty-year dream was born, transforming a commercial enterprise into a deep-rooted dedication to the land.

THE WINERY
La cantina rappresenta il cuore pulsante dell’azienda, il luogo in cui ogni fase della produzione prende forma con cura e dedizione. Qui seguiamo direttamente ogni passaggio, dalla lavorazione dell’uva appena raccolta fino all’imbottigliamento finale, garantendo un controllo completo e una qualità costante. La nostra struttura è infatti autonoma in tutte le fasi produttive, permettendoci di rispettare al massimo le caratteristiche originarie del frutto e del territorio.
All’interno della cantina trova spazio anche la barricaia, dove i vini destinati all’affinamento in legno maturano lentamente, acquisendo complessità, struttura ed eleganza. È un ambiente pensato per accompagnare il vino nel tempo, nel pieno rispetto dei suoi ritmi naturali.
Il lavoro quotidiano è portato avanti con passione da padre e figlio, unendo esperienza e visione, tradizione e rinnovamento. A supportare questo percorso c’è anche la collaborazione di un enologo, che contribuisce a valorizzare ogni scelta produttiva con competenza tecnica e sensibilità. In questo equilibrio tra famiglia, conoscenza e territorio nasce l’identità autentica dei nostri vini.
OUR GRAPE VARIETIES
I nostri vigneti si estendono nel cuore dell’Umbria, in un paesaggio collinare vocato da sempre alla viticoltura, dove altitudine, suolo e clima contribuiscono a definire l’identità dei nostri vini. Le vigne si trovano tra i 300 e i 350 metri sul livello del mare, su terreni prevalentemente argillosi, capaci di trattenere l’umidità e restituire equilibrio e struttura alle uve.
La produzione è incentrata soprattutto sui vitigni bianchi del territorio, in particolare il Grechetto di Todi e il Grechetto di Orvieto, espressioni autentiche della nostra terra. Accanto a questi coltiviamo anche varietà come Viognier e Chardonnay, che si adattano con eleganza al nostro microclima. Per quanto riguarda i rossi, trovano spazio Merlot, Sangiovese e Cabernet, interpretati nel rispetto delle caratteristiche varietali.
Un elemento distintivo della nostra produzione è il Grero, un vitigno unico al mondo riscoperto e valorizzato direttamente da noi, che rappresenta un legame profondo con la storia e l’identità del territorio. Tutti i nostri vini sono prodotti in purezza, per esprimere al meglio le peculiarità di ogni singola varietà.
La resa media è contenuta intorno ai 70 quintali per ettaro, una scelta precisa che privilegia la qualità rispetto alla quantità, permettendo di ottenere uve sane, concentrate e ricche di carattere. Nei nostri vigneti ogni intervento è guidato dal rispetto per la natura e dall’obiettivo di valorizzare al massimo ciò che la terra ci offre.
