Barbadoro

The result of a selection of Todi (70%) and Orvieto (30%) clones, this wine represents the opulent soul of Grechetto. Alcoholic fermentation is followed by an aging period of eight months in French barriques, which enriches the bouquet with sweet and spicy notes. On the nose, it is complex, with aromas of yellow peach and acacia blending with elegant hints of vanilla, dried fruit, hazelnut, and toasted almond. On the palate, it is powerful, decidedly savory, and presents the characteristic almond finish of Grechetto. The great freshness typical of Grechetto di Todi and the alcoholic content of this wine are perfectly balanced, creating a very fresh yet full-bodied sip.

Tasting notes

Appearance: Golden yellow

Nose: Very complex bouquet that opens with yellow-fleshed fruit notes of peach, pear, apple, and pineapple, along with delicate notes of white and yellow flowers. This is followed by notes of vanilla and sweet spices imparted by the wood aging. The elegant nose concludes with typical notes of dried fruit, hazelnut, and almond.

Palate: On the palate, it is powerful; the great freshness typical of Grechetto di Todi and the alcohol content of this wine balance perfectly, creating a very fresh yet full-bodied sip. The pronounced savoriness is also pleasant, well representing these soils and this grape variety.

Winemaking

The grapes are hand-picked in mid-September. The Todi and Orvieto clones ferment in steel tanks without malolactic fermentation to preserve their aromatic integrity and freshness. The aging process involves eight months of separate management with weekly bâtonnage (the Todi clone on fine lees in steel and the Orvieto in tonneaux), followed by a period in barriques to give the wine opulence and body. The process ends with bottle refinement to perfectly balance the wine's great structure and savoriness.

Pairings

Perfect with white meat and more delicate red meat. Stewed cod, large roasted fish, and aged and blue-veined cheeses.

Like Dante's Inferno, they fascinate with their narrative power, personality, olfactory complexity and a certain depth. Here, both the native grape varieties Sangiovese and Grechetto, and the more international Merlot, find their most complete form.

Zazzera Winery

The history of the Zazzera winery began around the mid-1960s, when the family produced the first wines for customers of their small country shop and for those who bought other agricultural products from the farm. In those years, viticulture was only one part of a broader agricultural activity, alongside cultivation and animal husbandry.

Over time, the company embarked on a path of evolution increasingly oriented towards winemaking. In the last thirty years, this transformation has solidified with a precise choice: to progressively abandon other agricultural productions and focus exclusively on viticulture, investing in vineyards and the quality of its wines.

Today, after more than half a century of history, Zazzera is a reality entirely dedicated to wine, with vineyards and a winery designed to maximize the value of the grapes and the territory, continuing to combine family tradition with a contemporary vision.
