Appearance: Intense red with purple hues. The purple color is typical of this grape variety due to the high levels of malvidin naturally present in it. Even after many years of aging, it will tend to show clear purple reflections.
Nose: The nose is broad and deep. The first breaths of the wine remind us of very ripe red and black fruit, black cherry, plum, blackberry, blackcurrant. Wild rose and violet accompany the initial nose. The vegetal part recalls undergrowth and aromatic herbs. In the glass, it evolves towards fresh notes of black pepper, representing its varietal heritage. Aging in exhausted wood imparts slight notes of tobacco, cocoa, and spices.
Taste: In the mouth, it has a powerful yet composed sip; the tannin is absolutely composed and velvety. The finish is precise and more than persistent. It is a meditation wine, elegant and with great character, with a unique phenolic texture.
This rare, indigenous grape, hand-harvested in late October, undergoes cold pre-fermentative maceration and steel fermentation with constant delestage and punch-downs. Malolactic fermentation occurs entirely in used barriques to promote micro-oxygenation and prevent the wood from imparting too many flavors that could overpower the fruit's identity. This is followed by twelve months of bâtonnage in steel. The process concludes with a long twelve-month bottle aging, essential for harmonizing the austere and elegant phenolic complexity that characterizes the grape.
Excellent with substantial cuts of meat, braised dishes, traditional legume soups, 70% dark chocolate, or, quite simply, enjoyed on its own as a meditation wine.

The Passito di Grechettocomes from long waits, natural appassimento, and meticulous care of the raw material. The Grero, an indigenous grape variety rediscovered and now exclusively cultivated by our company, embodies the highest symbol of this line: rare, distinctive, unrepeatable.

The history of the Zazzera winery began around the mid-1960s, when the family produced its first wines for customers of their small country shop and for those who purchased other agricultural products from the farm. In those years, viticulture was only one part of a broader agricultural activity, alongside cultivation and animal husbandry.
Over time, the company embarked on a path of evolution increasingly oriented towards wine production. In the last thirty years, this transformation has been consolidated with a precise choice: to progressively abandon other agricultural productions and concentrate exclusively on viticulture, investing in vineyards and the quality of its wines.
Today, after more than half a century of history, Zazzera is a reality entirely dedicated to wine, with vineyards and a winery designed to maximize the value of the grapes and the territory, continuing to combine family tradition and contemporary vision.
