Tasting notes

Appearance: Intense ruby red

Nose: Complex and intense, dominated by small red fruits such as cherry and raspberry, with notes of ripe plum and a beautiful hint of violet. The spicy notes recall cinnamon and black pepper, followed by light tobacco notes imparted by oak aging.

Palate: Elegant on entry, then expresses its power through good acidity balanced by the alcoholic and tannic components. A full-bodied sip with a dry and persistent finish. The retro-olfactory aromas are consistent with the taste and with the notes of small ripe red fruits.

Winemaking

Cultivated on hilly, clayey terrain and from a vineyard approximately 30 years old, Sangiovese grapes are hand-harvested in early October and fermented in steel tanks with continuous delestage and daily pump-overs. Malolactic fermentation occurs in wood, and the wine ages for at least 12 months in Slavonian oak barrels and French barriques to integrate tannins and provide softness. The process concludes with a period of refinement in the bottle to ensure its elegance and final balance.

Pairings

Traditional with red ragù, pappardelle with mutton sauce, thrushes, quails, pheasants, grilled meats, as well as aged cheeses.

Zazzera Winery

The history of Zazzera winery began around the mid-1960s, when the family produced the first wines for customers of their small country shop and for those who purchased other farm products from the company. In those years, viticulture was only one part of a broader agricultural business, alongside cultivation and livestock farming.

Over time, the company embarked on a path of evolution increasingly focused on wine production. Over the last thirty years, this transformation has solidified with a precise choice: to progressively abandon other agricultural productions and concentrate exclusively on viticulture, investing in vineyards and the quality of its wines.

Today, after more than half a century of history, Zazzera is a reality entirely dedicated to wine, with vineyards and a winery designed to maximize the value of its grapes and territory, continuing to combine family tradition with a contemporary vision.
