Appearance: Deep red with purplish reflections. The purple color is typical of this grape variety due to the high levels of malvidin naturally present in it. Even after many years of aging, it will tend to present clear purplish reflections.
Nose: The nose is broad and deep. The first breaths of the wine remind us of very ripe red and black fruit, black cherry, plum, blackberry, blackcurrant. Rosehip and violet accompany the initial nose. The vegetal part recalls undergrowth and aromatic herbs. In the glass, it evolves towards fresh notes of black pepper, which represent its varietal heritage. Aging in exhausted wood gives slight notes of tobacco, cocoa, and spices.
Palate: In the mouth, it has a powerful yet composed sip; the tannins are absolutely composed and velvety. The finish is precise and more than persistent. It is a meditation wine, elegant and with great character, with a unique phenolic texture.
This rare native grape variety, harvested manually at the end of October, undergoes cold pre-fermentative maceration and fermentation in steel tanks with constant delestage and punch-downs. Malolactic fermentation occurs entirely in exhausted barriques to promote micro-oxygenation and prevent the wood from imparting too many aromas that could overpower the fruit's identity. This is followed by twelve months of bâtonnage in steel tanks. The process concludes with a long twelve-month aging period in the bottle, essential to harmonize the austere and elegant phenolic complexity that characterizes the grape variety.
It is extraordinary with substantial cuts of meat, braised dishes, traditional legume soups, 70% dark chocolate or, more simply, enjoyed on its own as a meditation wine.

The history of Zazzera winery began around the mid-1960s, when the family produced its first wines for customers of their small country shop and for those who purchased other farm products from the estate. In those years, viticulture was just one part of a broader agricultural activity, alongside cultivation and livestock farming.
Over time, the company embarked on a path of evolution increasingly focused on winemaking. In the last thirty years, this transformation has solidified with a precise choice: to progressively abandon other agricultural productions and concentrate exclusively on viticulture, investing in vineyards and the quality of its wines.
Today, after more than half a century of history, Zazzera is a reality entirely dedicated to wine, with vineyards and a winery designed to maximize the value of the grapes and the territory, continuing to combine family tradition with a contemporary vision.
