Biccicocco - 2020

A more structured interpretation of the “classic” Merlot. It is first vinified in steel and then undergoes malolactic fermentation entirely in wood. Aging in new French oak barriques for over eighteen months gives it complexity and deep tertiary notes. The aromatic bouquet is intense, with hints of cherry jam, cocoa, roasted coffee, and spices. On the palate, it is intense, savory, and enveloping; the wood completes the identity of the grape variety, making the tannins velvety and ensuring a soft, very long-lasting finish.

Tasting notes

Appearance: Intense ruby redNose: The nose opens with notes of ripe pink fruit and elegant vegetal notes characteristic of the grape variety, which, however, never overpower the bouquet. In the glass, it then evolves with notes of cocoa, roasted coffee, vanilla, and spices. Notes of aromatic herbs such as sage and bay leaf accompany the rest of the aromas. Delicate ethereal notes close the experience. Palate: On the palate, it is intense, savory, and enveloping; the wood completes the identity of the grape variety, making the tannins velvety and ensuring a smooth and very long-lasting finish.

Winemaking

Merlot grapes, hand-harvested in mid-September, undergo temperature-controlled fermentation in steel after cold pre-fermentative maceration. The wine completes malolactic fermentation in wood and ages for at least 18 months in new French oak barriques, acquiring a significant structure and complex tertiary notes. A necessary bottle refinement phase follows to harmonize the volume and power of the sip before distribution.

Pairings

This wine calls for complex, intensely flavored dishes. Try it with roast lamb, stewed wild boar, game, and richly spiced red meats.

Zazzera Winery

The history of the Zazzera winery began around the mid-1960s, when the family produced its first wines for customers of their small country store and for those who purchased other farm products from the estate. In those years, viticulture was just one part of a broader agricultural activity, alongside cultivation and livestock farming.

Over time, the company embarked on a path of evolution increasingly focused on wine production. In the last thirty years, this transformation has solidified with a precise choice: to progressively abandon other agricultural productions and concentrate exclusively on viticulture, investing in vineyards and the quality of its wines.

Today, after more than half a century of history, Zazzera is an entity entirely dedicated to wine, with vineyards and a winery designed to maximize the value of its grapes and territory, continuing to combine family tradition with a contemporary vision.
