Black Cherry

A pure Merlot that expresses the centrality of the fruit through winemaking and aging exclusively in steel for at least twelve months. After malolactic fermentation, the wine rests further, for a few months, in the bottle to soften its profile. On the nose, the aromatic bouquet is dominated by small black fruits, sour cherry, and a controlled and elegant vegetal note. On the palate, it is warm and full, characterized by velvety and never intrusive tannins. A clean, persistent finish, with notes of blackberry and blackcurrant.

Tasting notes

Appearance:Ruby red with violet reflections

Nose: The olfactory profile is dominated by small dark fruits such as currants, blackberries, blueberries, but also cherry. As for flowers, we find fresh rose accompanied by violet. A note of dark mineral and aromatic herbs accompanies a nose that, overall, is fresh and powerful.

Taste: An absolutely enveloping and full drink. The tannic part contrasts well with the freshness given by the acidity and a pleasant sapidity. The sip is consistent with the nose and reiterates the fruity and floral aromas that were preserved during vinification. Aging in steel makes it fresh and easy to drink.

Winemaking

This pure Merlot, grown in a protected microclimate, is fermented in stainless steel with daily pump-overs and undergoes complete malolactic fermentation. This is followed by at least twelve months of aging in stainless steel tanks with regular bâtonnage to enhance the notes of ripe red fruit without the use of wood. Before distribution, the wine rests in the bottle to harmonize its powerful structure and full-bodied taste.

Pairings

Its body makes it an ideal pairing for tagliatelle with ragù, roast veal, grilled meat, game, and medium-aged cheeses.

Zazzera Winery

The history of the Zazzera winery began around the mid-1960s, when the family produced their first wines for customers of their small country shop and for those who bought other agricultural products from the farm. In those years, viticulture was only one part of a broader agricultural activity, alongside crops and livestock farming.

Over time, the company embarked on a path of evolution increasingly oriented towards winemaking. In the last thirty years, this transformation has solidified with a precise choice: to progressively abandon other agricultural productions and focus exclusively on viticulture, investing in vineyards and the quality of its wines.

Today, after over half a century of history, Zazzera is a reality entirely dedicated to wine, with vineyards and a winery designed to maximize the value of its grapes and territory, continuing to combine family tradition with a contemporary vision.
