Appearance: Pale pink
Nose: The white vinification of Sangiovese grapes brings notes of fresh fruit such as strawberry, pomegranate, and blood orange to the nose. The red flower bouquet is delicate, almost hinted at. The second fermentation provides elegant notes of bread and butter.
Taste: Sangiovese offers a more structured sip despite the white vinification. The great freshness is accompanied by elegant bubbles, as well as a savoriness that fixes the aromas and extends their persistence. Its easy drinkability makes it very versatile for pairings and equally enjoyable when tasted on its own.
Sangiovese grapes, hand-picked and selected in early September, are vinified in white through a soft pressing and a subsequent fermentation of the free-run must in steel tanks at controlled temperature. The process continues with the secondary fermentation (prise de mousse) using the Martinotti method for about two months, avoiding malolactic fermentation to preserve the freshness and fragrance of the small red berries. The cycle concludes with aging in steel tanks and the necessary bottle refinement before release.
The white winemaking process, Sangiovese grapes, and the bubbles give it great versatility. It is an ideal companion for aperitifs, fish crudités, white ragù, and fruit desserts.

The history of the Zazzera winery began around the mid-1960s, when the family produced its first wines for customers of the small country shop and for those who purchased other agricultural products from the farm. In those years, viticulture was just one part of a broader agricultural activity, alongside cultivation and livestock farming.
Over time, the company embarked on a path of evolution increasingly oriented towards winemaking. In the last thirty years, this transformation has solidified with a precise choice: to progressively abandon other agricultural productions and concentrate exclusively on viticulture, investing in vineyards and the quality of its wines.
Today, after over half a century of history, Zazzera is a reality entirely dedicated to wine, with vineyards and a winery designed to maximize the value of its grapes and territory, continuing to combine family tradition and contemporary vision.
