Biccicocco - 2018

A more structured interpretation of the “classic” Merlot. It is first vinified in steel, then undergoes malolactic fermentation entirely in wood. Aging in new French oak barriques for over eighteen months gives it complexity and deep tertiary notes. The aromatic bouquet is intense, with hints of cherry jam, cocoa, roasted coffee, and spices. On the palate, it is intense, savory, and enveloping; the wood completes the identity of the grape variety, making the tannins velvety and ensuring a soft finish with very long persistence.

Tasting notes

Appearance: Intense ruby red

Nose: The nose opens with notes of ripe pink fruit and the elegant vegetal notes characteristic of the grape variety, which, however, never overshadow the bouquet. In the glass, it then evolves with notes of cocoa, roasted coffee, vanilla, and spices. Notes of aromatic herbs such as sage and bay leaf accompany the other aromas. Delicate ethereal notes conclude the experience.

Palate: On the palate, it is intense, savory, and enveloping; the wood completes the identity of the grape variety, making the tannins velvety and ensuring a soft, very long-lasting finish.

Winemaking

The Merlot grapes, harvested manually in mid-September, undergo fermentation in stainless steel at controlled temperatures after cold pre-fermentative maceration. The wine completes malolactic fermentation in wood and ages for at least 18 months in new French oak barriques, acquiring a significant structure and complex tertiary notes. This is followed by a necessary period of refinement in the bottle to harmonize the volume and power of the sip before distribution.

Pairings

This wine calls for complex, intensely flavoured dishes. Try it with roast lamb, braised wild boar, game, and substantial, particularly spicy red meats.

Here, the wine is decisive, deep, capable of expressing structureand character. It is the line that best embodies the expressive strength of the Zazzera winery.

Like Dante's Inferno, they captivate with their narrative power, personality, olfactory complexity, and a certain depth. Here, both indigenous grape varieties Sangioveseand Grechetto, as well as the more international Merlot, find their most complete form.

Zazzera Winery

The history of the Zazzera winery began in the mid-1960s, when the family produced its first wines for customers of the small country shop and for those who purchased other farm products from the company. In those years, viticulture was only one part of a broader agricultural activity, alongside crops and livestock farming.

Over time, the company embarked on a path of evolution increasingly focused on wine production. In the last thirty years, this transformation has solidified with a precise choice: gradually abandoning other agricultural productions and concentrating exclusively on viticulture, investing in vineyards and the quality of its wines.

Today, after more than half a century of history, Zazzera is a reality entirely dedicated to wine, with vineyards and a winery designed to maximize the value of its grapes and territory, continuing to combine family tradition and contemporary vision.
